Not a lot of things in food are better than a big plate of chips and salsa. But, it’s not low FODMAP, and that is terrible. So, we needed to fix that. We came up with a low FODMAP salsa recipe that doesn’t suck. In fact, it’s delicious. When you need your chips and salsa fix, you can turn to this, be satisfied, and not get sick. low FODMAP winning!
- 3 Tomatoes, chopped
- 1/3 Cup Cilantro, chopped
- 1 Tbl garlic infused olive oil
- 1 jalapeno, chopped. Seed and devein.
- 1 tsp lemon juice
- salt and pepper to taste
Combine all the ingredients and refrigerate. Serve it up with chips or whatever strikes your fancy.
Pro Tip: If you like salsa that is a little on the soupy side, blend half the tomatoes with a stick blender to the consistency of your liking. Try 1/4 tsp of asafoetida to bring some onion flavor into this dish.
Just because you have to follow a low FODMAP meal plan, doesn’t mean your food life has to be bland and boring. We don’t accept bland and boring, and neither should you.
